    This plant looks like a sunflower,exept it has broad leaves,and a yellow central disk on flowers. Sunflower has heartish shaped leaves and brownish central disk. Collect the tuber any time fall though spring.

    These things are probably one of the very best wild edible plants out there. They are difficult to find due to over harvesting in many areas however. They have become available via many seed catalogues and online vendors in recent years though. I have planted some on my land and without any care at all they are growing and spreading fast. I can't wait to eat more this year!
