    Perennial herb. Upright succulent stems up to 80cm tall from fleshy tubers. Leaves alternate or whorls of 3, simple, fleshy 3-6 cm long, 1-3 cm wide. Pointed or blunted at tip, toothed along margin, green to bluish green. Flowers produced in compact, branched cluster at tips of branches, 6-10 mm across, with 5 redish purple to deep pink petals. Harvest young leaves in spring and tubers from summer through spring as long as they are firm and crisp. Add raw, young leaves to salads or use for trail snack. boil leaves gathered in summer for 5-10 minutes. Pour hot pickling liquid over tubers and let sit for several days before eating. boil tubers for 20 minutes, season.
